Cheesy Omelette

We have talked about the importance of eating breakfast, and also about the health benefits of including eggs and dairy in your kid's diet.

However, there is another component in this recipe that we haven't discussed. Let's talk about butter. Yes, I know butter is fat. Is it good for your kid's to eat butter? Well, there are three aspects to consider about this topic.

1. Is it good for the kids?

2. How often should they eat it?

3. What kind of "butter" are you buying at home?

As I said before, butter is high in fat, but the kind of fat that is a source of good cholesterol. It is also packed with water-soluble vitamins and minerals that are important for many of the kid's body functions. Among the benefits of eating butter are: helps to assimilate other nutrients from food, improves digestion, prevents calcification of calcium, improves the immune system because is a great source of antioxidants, and more importantly, aids the brain and physical development.

Of course, big quantities of butter aren't good. I use it to cook eggs, serve it with pasta, or very few time I spread it on a toast or "arepa". When cooking with butter remember the heat affects its quality. If cooking with butter, don't let it burn.

When buying butter, be careful with what you choose. There are many different options, butter, margarine or spread, and in my opinion companies doesn't do a great job labeling their products, so it could be very confusing to make a decision. The difference between this products is mainly what they are made of. Butter is made out of cream, which comes from milk, and margarine and spreads come from plant oils. Spreads tend to have less fat than margarine. I recommend organic butter.

Here is a great idea of how to use the butter.

What do you need?

1 Eggs

1/2 Cup shredded mozzarella cheese

1 Tbsp. Milk

1 Tsp. Butter

Salt and pepper to taste

What to do?

  1. Heat a non-stick skillet over medium heat

  2. In the meantime, beat the egg and the milk together and add salt and pepper to your liking

  3. Heat the butter in the skillet and tilt to cover the bottom completely

  4. Pour in the egg mixture and cook for a minutes or two, or until cooked

  5. Flip with the help of a spatula

  6. Place the filling and push both ends to the middle

  7. Let the cheese melt

Voila!

  • You can add sauteed veggies or meats, if your kids eats them

  • You can serve with wholegrain wheat bread
