Veggie "Nuggets"

Mia doesn't eat chicken, but every one in a while we do. For this reason, I have explore different options to "substitute" the traditional nugget. From fish sticks to this veggie creation, she have liked them all.

I can keep taking about the reasons why I don't like chicken for Mia, but I have many people waiting for this recipe. So here you guys...

What do you need?

1 Broccoli head (small)

2 Carrots

1/4 Onion

2 Scalions

20 Spinach baby leaf

2 Garlic cloves

2 Eggs

1/4 Cup oats

1/4 Cup Parmesan cheese

1 Tbls. Olive oil

Salt & pepper to taste

What to do?

  1. Wash the broccoli head and cut into small pieces

  2. Peel the carrots and cut into small pieces

  3. Wash and hand cut the scallions into small pieces

  4. Process the oats in a food processor to make it thinner like breadcrumbs

  5. Process the broccoli, carrots, onion, spinach, and garlic in the food processor until it is granny and looks like a "paste"

  6. Beat the eggs separately from the mixture

  7. Add the scallions, salt and pepper and mix into the "paste"

  8. Finally add the eggs, oats and Parmesan cheese, and mix until combined

  9. Always check the texture and add more oats or Parmesan cheese to make it more consistent, if needed

  10. Take small portions and make it into bite size and nugget shape

  11. Pan-fry the "nuggets" on medium heat for about 2 minutes per side

Voila!

Tips, variations & more:

  • Use breadcrumbs if you like

  • You can also finish the nuggets by breading them with breadcrumbs or more oats before pan-frying

  • You can serve with blueberry BBQ sauce, which we will be making really soon
