Potato Fritters / Milhojas de papas
The potato fritters are either good as the main course accompanied by a salad or could also be used as a side dish, if you serve it with a protein. This recipe is super easy to make and also very nutritious.
The benefits of he potatoes are on the skin, which I usually discard if they aren't organic. However, eggs are a magnificent source of protein, vitamins and minerals. The myth about the cholesterol in eggs raising the cholesterol in the blood has been denied and studies actually show that eating eggs on a regular basis leads to elevated levels of the "good" cholesterol, which is associated to a reduced risk of heart disease.
Among other benefits, eggs are linked to eye health, reducing blood triglycerides, weight loss and even helping prevent breast cancer.

What do you need?
2 Potatoes (medium)
2 Eggs
2 Garlic cloves
1 Scallion
1/2 Cup Parmesan cheese
2 Tbsp. Whole milk
2 Tbsp. Olive oil
Salt & pepper to taste
What to do?
Preheat the oven at 350 F degree
Slice potatoes very thin by hand or using a mandolin
Season the potatoes with the olive oil, salt and pepper
Beat the eggs and ass the milk, crushed garlic and scallions
Use an oven safe dish / casserole and lay the potatoes leaving spaces to pour the egg mixture. I used a specialty casserole I bought to make onion soup, that gives me four portions that are perfect for Mia
Pour the egg mixture and make sure all the potatoes are covered
Cover with the Parmesan cheese
Bake for 15 minutes or until cook. If you want, you can broil for two minutes
