Camembert & Figs Wrapped on Puff Pastry
Appetizers and dessert are definitely my favorite part of a meal. I love the concept of eating a "a little bit of everything" and trying different flavors at once. Most of the time I don't eat "a little bit", so the idea of eating appetizers to stimulate my appetite doesn't work for me.
For Thanksgiving we decided to make a variety of appetizers, but we made them bite-size so we didn't stuffed our belly before the huge meal we had ahead. I was assigned to make the appetizers and I tried to have something for every guest. In my family we have various allergies and a bunch of picky eaters.
The appetizers included, traditional devil eggs, philo baskets stuffed with spinach and feta, tuna tartar, camembert & caramelized figs wrapped on puff pastry and a big board of cheeses and meats.
Here is the first recipe of our appetizer menu.
What do you need?
1 8 Oz Camembert cheese
1 Sheet puff pastry
1 Egg
3 Figs (natural)
1 Tbsp. Coconut sugar
1 Tsp. Butter
1/2 Tsp. Organic maple syrup
1/4 Tsp. Thyme
What to do?
1. Defrost your puff pastry 30 minutes before baking the appetizer
2. Pre-heat the oven at 430 F or according to your pastry's cooking instructions
3. Cover a baking pan with non-stick aluminum foil or parchment paper
4. Beat the egg
5. Wash and cut your figs in thin slices
6. Pre-heat a non-stick pan on medium high and add the butter until it melts
7. Cook the thyme for 30 seconds and add the figs
8. Cook them for a minute and add the sugar and the maple syrup
9. Caramelize the figs without overcooking them. Set aside and let them cool down
10. Cut or "peel" the surface of the cheese on both sides, so it melts quickly
11. Lay the puff pastry in the baking pan and center the cheese
12. Top the cheese with the figs and enclose in the pastry. I cut the edges and cover the cheese completely, making a decorative design
13. Brush with the beaten egg. Some people use the egg yolk only, but I used the whole egg
14. Bake for 30 minutes or until brown and crispy
