Mia's Cold Quinoa Salad
We have already talk about the benefits of quinoa, but this simple salad has another powerful ingredient, lime.
Eating limes have amazing health benefits that include weight loss, skin care, eye care, improving digestion, respiratory and urinary disorders, relief from constipation, and of course, preventing colds. The reason why is because limes contain 35% of your daily vitamin C requirements.
It is very difficult to get a toddler to try and like limes, but this is a good way to start.
What do you need?
1/2 Cup cooked quinoa
1/2 Avocado
1/2 Lime
1 Tbsp. Dried cramberries
1/2 Tbsp. Olive oil
Salt & pepper to taste
What to do?
Cut the avocado into small pieces and add salt to taste
In a small bowl, mix the quinoa and the cranberries and leave the avocado on top
Season using the lime and the olive oil and tossed
Voila!
