Leftovers? Sushi
The other day I cooked white rice with carrots... it was good but I believe I added too much water and it was in the soft side, which we don't like.
Today, I was looking around to start making lunch for Mia and I realized all I had in the fridge was the rice, fish "pisillo" and fresh vegetables. I felt adventurous and decided to make sushi for the very first time in my life.
I had regular rice, not the special sushi rice. Would this work? Would I want to give Mia sushi rice? Rice is a cereal grain with a lot of health benefits, like providing instant energy, improving digestion, preventing obesity, and is even said to slow down again (no wonder why Asians age so graciously). Sushi rice is a different variety of grain and is cooked adding oil, vinegar and sugar, which add some extra calories. Sure I will let her try sushi once she's ready, but for now all we had was regular rice.
Here is a step by step of my adventure... I will let you be the judge.
What do you need?
1/2 Cup cooked rice
1/4 Cup fish pisillo
3 Cucumber sticks
3 Avocado sticks
1 Tbsp. Reduced sodium soy sauce (optional)
1 Cup watter
Sharp knife or bread knife required
Little piece of plastic wrap / cling wrap
What to do?
I made my hand roll with 1/2 cup left over rice. I just added shredded carrots to the regular white long grain rice while cooking it
If you are cooking the rice the same day, let it cool and place in the fridge before using it
Use the cup of water to wet your hands to manipulate the rice
Before laying the rice, I pressed it against the container like if I was making a dough
Lay the plastic wrap on the kitchen counter and transfer the rice
Make a rectangular red of rice and press it together a little more to make sure it sticks together
Lay the cucumber sticks, the avocado and the fish horizontaly
Roll tight with the help of the plastic wrap
Turn the ends of the plastic wrap as a candy and press it together a little more
Open and transfer the roll into the kitchen counter rolling it
Cut into 1/2 inch slices
Plate the sushi bites and "dress" with the soy sauce (optional)
