Sweet Potato Waffles
Sweet potatoes have become very popular in the last 15 years, since diets like the Paleo (which resurfaced in 2002) started to gain notoriety. This vegetable root is named among the healthiest foods and is very inexpensive.
But why are sweet potatoes so good? It is "the source" of beta-carotene which increases the blood level of Vitamin A, specially in children. Additionally, it is packed with antioxidants, Vitamins B and C which supports the immune system, has anti-inflammatory properties and is said to help control the sugar level on the blood.
It is always better if you steamed or boiled your sweet potatoes and including "good fat" like olive oil makes it even better, according to recent studies.
Here is a recipe for a great start to the day.
What do you need?
1 Medium sweet potato (cooked and mashed)
1/2 Cup of Pancake / Waffle flour mix
1/3 + 2 Tbsp. Water or milk
1 Tbsp. Butter (melted)
1 Tbsp. Olive oil
1/2 Tbsp. Honey
What to do?
Boiled or steam the sweet potato. You can also cook it in the microwave for 4 to 5 min (depending on the size), let it cool and mashed it
Preheat your waffle maker or iron pan and grease with either olive oil or a little butter
In a bowl mix the flour with the water or milk, the butter and the honey
Add the sweet potato puree last and mix well
Ladle the batter into the preheated waffle maker and cook according to the machine instructions
Mine cooks the waffles in 2 to 3 minutes and I always leave them for 2 cycles, so they are crispier
