Stuffed Fishloaf
Meatloaf is popular comfort food, considered a traditional dish of the southern cuisine. In reality, this dish was first served in Pennsylvania by German-Americans in colonial times, and it was originally made with pork and cornmeal.
However, it wasn't until the Great Depression that this dish gained popularity and became a way of feeding a family inexpensively. Since then, many variations have been created with different kinds o meats, poultry and even seafood.
Commonly, the meatloaf recipe calls for saltine crackers or bread, eggs, milk, mustard, onion powder and ketchup. My vision is made out of fish and using healthier ingredients for a tasty and moist loaf.
What do you need?
0.350 Lbs. White fish fillet
1 Egg
1/4 Onion
1/4 Red pepper (small)
1/4 Leek
1/3 Cup mozzarella cheese
1/4 Cup shredded carrots
1/4 Cup marinara sauce
1/4 Cup breadcrumbs
1 Tbsp. Olive oil
1 Tbsp. Steel cut oats
1 Tsp. Parsley
1/2 Tsp. Garlic (crushed)
Salt and pepper to taste
What to do?
Pre-heat the oven at 400 F degrees
Shred the carrot and the mozzarella, if needed
Use a food processor to chop the onion, pepper, leek, garlic and parsley all together, and transfer to a bowl
Use the same processor to ground the fish and transfer to the bowl with the chopped veggies
Season with salt and pepper and mix well
Beat the egg
Add the beaten egg, the breadcrumbs and oats into the fish and combine well
Use aluminum foil to roll the loaf. Place a large piece of foil on the kitchen counter and grease with the olive oil
Transfer the fish to the foil and pat out the mixture into a rectangular shape of about 1/2 inch thick
Spread the shredded carrots and the cheese over the fish leaving a 3/4 inch border on the edges
Roll up to enclose the filling and compress
Place on a backing tray or an oven safe dish (I transfer the loaf to a dish, because I avoid cooking on foil)
Spread the marinara sauce on the top
Cover and bake for 20 minutes or until cook (remember fish cooks faster than meats)
Open and let broil for another 4 minutes or until golden brown
