Flourless Chocolate Chip Cookies
Let's talk chocolate! Dark chocolate has incredible wellness properties and is, in fact, consider the most powerful antioxidant superfood.
Studies show that dark chocolate is associated with heart health, managing cholesterol and blood sugar level; and it is good for the kids because is said to better the cognitive function.
But be carefull, NOT all chocolates are good. There a a big number of chocolate brands that make bars with very little chocolate and a lot of sugar and bad chemicals to "enhance" flavor. So be smart when buying the chocolate you want to share with your family and always choose real dark chocolate.
I did some research to give you lights on the best options and found an article at a website called Healthyeater.com that recommends the following "commercial" brands:
1. Ghirardelli Intense Dark. 72% Cacao and 86% Cacao Chocolate Bars.
2. Godiva. 72% Cacao Chocolate Bars. Not processed with alkali.
3. Lindt. 70%, 85%, and 90% Cacao bars. They also make a 99% cacao.
If you go to Wholefoods, Trader Joe's or Stew Lenards you can find different options, including local brands.
What do you need?
1 Egg
1 1/2 Cup oat flour
1/2 Cup dark chocolate chips
1/2 Cup organic coconut oil
4 Tbsp. Coconut sugar
2 Tsp. Vanilla extract
1/2 Tsp. Backing soda
1/4 Tsp. Salt
What to do?
Pre-heat the oven at 375 F degrees
Melt the coconut oil
In a bowl, mix the flour, the coconut sugar, the baking soda and the salt
In a second bowl (large) beat the egg with the vanilla and the melted coconut oil
Add the dry ingredients slowly into the egg mix whisking with a silicone spatula
Add the chocolate chips
Cover a baking tray with parchment paper
I used a tablespoon measure to shape the cookies and lay the small balls in a baking tray
Bake for 10 minutes
Voila!
