Avocado Pesto Sauce
The avocado is one my favorite foods on earth and is one of the most versatile fruits you will find. Yes, I said fruit... Many people think avocados are a vegetable because we usually see them in savory dishes, but in some other latitudes are eaten with lemon or top with sugar, like in Brazil.
As a matter of a fact, the avocado is one of the few fruits that is packed with good fatty acids and also has plenty of vitamins and minerals. In my country, avocados grow everywhere and were one of the most underrated foods until they became popular years ago.
Before, people thought that eating avocados wasn't good because of all the fat they have, but after the healthy wave that came in the early 2000's when diets recommended we should go back to the bases and forget about process food, everything changed.
Nowadays avocados are used in oils, as a substitute of mayonnaise in savory dishes and even as a substitute of eggs for baked goods. There is a restaurant in the city that serves avocado toast only, that's how popular it has become.
Some of the amazing qualities and benefits of avocados are: provides a greater intake of potassium than eating bananas, avocados are packed with fatty acids that aids heart health, are loaded with fiber, aids the absorption of nutrients from other food, relief arthritis pain and helps loose weight.
Here is a delicious way to incorporate avocados in your diet.
What do you need?
1 Hass avocado
1 Lime (juice)
1/2 of a 2.5 Oz. Fresh basil
2 Tbsp. Olive oil
2 Tbsp. Parmesan cheese
1/2 Tsp. Garlic (crushed)
1/4 Tsp. Salt
What to do?
1. Cut the avocado and save the seed for later
2. Blend all the ingredients in a blender, incorporating the olive oil slowly to obtained a creamy texture
3. Use the seed to prevent the sauce from oxidation, when placing in refrigeration

You can add roasted pine nuts
Use the amount of basil you want, remember basil has a strong flavor. We like it pretty strong, but feel free to use less
