Healthy Crepes Two Ways | Choco-banana

Crêpes are another great recipe that France has gifted to the world. They are original from the Northwest of the country and the word means "pancakes". The recipe was first made with buckwheat and it wasn't until the 1900's that the recipe was made with white flour.

They are not only popular in France, but all around Europe, and you can find them with different names (and some variations to the recipe) in the majority of the European countries. 

Crêpes can be filled with almost everything, you can make them savory as a meal or sweet for dessert. I personally love Crêpes because they are super easy to make (you only need a blender and a non-stick pa), it takes a minute to cook them, the ingredients are inexpensive, and you can store them in the fridge and use them at your convenience...

Here is one of two complete different creation I made for my family with one simple  and healthy Crêpe recipe.

What do you need?

1 Egg

3 Bananas

1/4 Cup Buckwheat flour

1/4 Cup Greek yogurt

1/4 Cup water

1 Tbsp. Coconut oil

1 Tsp. Coconut sugar

6 Tbsp. Dark chocolate (grated)

1/4 Tsp. Vanilla

Olive oil spray

Pinch of salt

For 6 small crepes

What to do?

1. Mix all the ingredients in the blender, until well combine

2. Heat a non-stick pan and grease with the olive oil spray

3. Scoop the crepe batter with a spoon and spread around the pan quickly

4. Cook for about a minute per side or until brown

5. Once ready for one side, flip the crepe and add the chocolate to melt

6. Fold by flipping both ends to the center and transfer to a plate

7. Top with 1/2 sliced banana

8. Repeat until all six crepes are ready 

Voila!

  • Stuff with fruits, peanut butter and chocolate or whatever you want... Be creative!
