Mini Spinach Quiche
We have long know the amazing health benefits of eating spinach. This days we eat them as a garnish sauteed with butter and garlic, we eat them raw in salads and we even drink them on smoothies.
But why? Spinach are super rich in fiber and protein, low fat and low cholesterol. Eben better, they are packed with calcium, iron, magnesium, phosphorus, potassium and vitamins like A, B6, C, E and k.
In addition, they are very versatile and Mia loves them. I use spinach not only as a vegetable, but more as a "condiment" because I add it to almost everything Mia eats.
What do you need?
Filling
3 Oz Organic baby spinach
3 Scallions
1 Egg
1/3 Cup ricotta cheese
4 Tbsp. Parmesan cheese
1 Tbsp. Water
1 Tsp. Butter
1/2 Tsp. Garlic (crushed)
Salt and pepper to taste
Crust
5 Crackers Wasa Fiber bread
4 Tbsp. Butter
What to do?
Wash the baby spinach and let dry
Preheat the oven at 400 F degrees
Preheat a non-stick pan and grease with the butter
Saute the spinach for about a minutes and add salt and pepper
Let cook another minute and add the water, if needed. Then let cook for 3 to 4 minutes
Add the garlic, mix and cook for an additional minutes
Set the spinach aside and let it cool down
In the food processor, ground the fiber crackers fine with flour texture
Melt the 3 tps. of butter and mix with the cracker crumbs
Use the additional butter tsp. to grease the muffing tray
Transfer the "dough" to the muffing tray and compress using a spoon or measuring cup
Bake for 5 minutes or until browned
In a bowl, season the ricotta cheese with pepper and 3 tbsp. of parmesan cheese
Add the sauteed spinach and mix well
When ready to bake the quiche, beat the egg and add it to the ricotta cheese filling
Ladle the mix in the muffing tray over the crusts
Sprinkle the last tbsp. of parmesan cheese
Bake for about 15 minutes or until you insert a knife and comes out clean
