Yogurt Tahini Dip - Mediterranean Duo
The combination of yogurt and tahini is better known on dressings, sauces and marinades. However, I love twisting and mixing recipes and I created my very own version of a Mediterranean dip adding cucumber.
Cucumbers are made of 95% of water, reason why they are hydrating and cooling. They are also known as anti-inflammatory, high in fiber and low in calories. Some other benefits that aren't known include: reduce the risk of breast, uterine, ovarian, and prostate cancers; supports heart health, promotes digestive health, helps manage stress, improves brain function and even freshen your breath.
Cooking with cucumber can be tricky because of the high water content, but here is a tasty way of incorporating cucumber in your diet.
What do you need?
1 5 Oz Greek Yogurt
1/2 Cucumber
1/2 Lime
1 Tbsp. Olive oil
1 Tbsp. Tahini
1/2 Tsp. Cumin
1/4 Tsp. Garlic (crushed)
1/4 Tsp. Salt
Pepper to taste
What to do?
Squeeze the juice of half of a lime and set aside
Cut the cucumber in half. Take one of the half parts, peel it, take out the seeds with a spoon and shred it
Cover a bowl with a cotton cheese cloth or any clean cotton cloth available and transfer the shredded cucumber
Strain by twisting the cloth and discard the excess water
Put the cucumber back on the bowl and add the rest of the ingredients with exception of the olive oil
Mix well with an spatula and add the olive oil to make the sauce smoother
Place in the fridge for an hour (at least) before serving
Voila!
