Tabbouleh with Quinoa
Tabbouleh is a very simple, yet delicious and super healthy salad. It is a stamp of the Lebanese cuisine and have been replicated in many other Middle Eastern countries.
Parsley is a miraculous plant, with amazing health benefits. First and foremost it is diuretic and anti-inflammatory, which make it a superfood if you are on a diet. Whether you drink parsley tea or an infusion, or you add a little parsley on your morning smoothie you will benefit from it.
It is a natural remedy for UTI and is said to help fight kidney stones. It also has anti-bacterial and anti-fungal properties. Is packed with antioxidants which fight free radical damage. Helps with digestions and even combats bad breath if you chew it.
The traditional recipe is made with fine bulgur, but I had quinoa in the fridge and it goes very well. Also, using quinoa makes the dish gluten free and to be honest I liked it better.

What do you need?
1/2 Cup Quinoa
1/2 Curly parsley bunch (1 Cup chopped)
1 Vein tomato (large)
1/4 Yellow onion
1 Lime
3 Mint leaves (optional)
2 Tbsp. Olive oil
Salt and pepper
What to do?
1. Rinse and dry the parsley
2. Chop the parsley finely. If you are using mint, chop it together with the parsley 3. Cut the tomato and onion in small cubes
4. In a medium bowl, combine all the ingredients and dress with the olive oil and the juice of the lime
5. Season with salt and pepper
6. I always chill the salad for at least 30 minutes before serving
